Peach palm ( Bactris gasipaes Kunth) and mammee apple Mammea americana L.) are fruits found in Latin America, North of South America (Amazonia) Western India, traditionally consumed with the disposal seeds. These materials presented high caloric value, essential amino acids, phosphorus, magnesium, potassium, calcium, iron, zinc, absence anti-nutritional compounds, low concentration phytates tannins. The morphological characteristics indicated presence starch granules seeds, which contain 21% this polysaccharide. oil from peach seeds is rich lauric acid (49.82%) myristic (21.53%) may galactomannans their structure (mannose/glucose 4:1). seed showed palmitic (30.75%), oleic (36.12%), linoleic (25.89%). these justify application, converting residues into new possible application food industry other industrial sectors. • Properties Kunth L. solid residue to potential raw material. Residual free antinutritional compounds. as source starch.
